L’indice glicemico è un concetto talmente complesso che è molto importante non banalizzarlo nella relazione alimento-indice. Come si vede dalla tabella, le cose sono un po’ più compicate e spesso non si è in grado di essere precisi se si indica l’alimento con terminologia generica. Per esempio, se in Francia entrate in un negozio di alimentari, potreste scegliere una baguette al pane bianco (l’indice glicemico può arrivare fino a 115) oppure un pane al latte (in questo caso, con un po’ di fortuna avrete un indice glicemico di 53): morale, se si specifica solo “pane”, ci può essere una differenza di 50 punti nell’indice glicemico!
